猴头菇又名猴头菌,外形酷似猴子的头而得名,民间素有“多食猴头,返老还童”之说,因营养丰富、肉质鲜嫩、滋补养身,故与燕窝齐名。菇中富含蛋白质、矿物质、维生素、氨基酸,不饱和脂肪酸,且脂肪极低,具有降低血胆固醇、延缓衰老、提高免疫力的功效,是非常难得的一种保健食品。
猴头菇排骨汤
原料:
猴头菇5朵、香菇5朵、排骨500克、花椒、姜片、黄酒、红枣适量。
制作方法:
1、将排骨洗净后剁成小块,放入沸水中煮5分钟,倒入黄酒,煮去血水,沥干备用;
2、将猴头菇用清水泡软后捞出(8小时以上,大家可以吃完晚饭后泡上),挤干水,去根蒂和泥沙;
再放开水锅中氽40分钟,捞出后挤尽水分,撕成小朵备用;
3、炖锅中加水,放入排骨、猴头菇、香菇、黄酒、姜片、红枣、花椒,大火煮30分钟;
4、大火煮开后,转中火炖半小时,再转小火炖2小时候左右,到排骨软为止。
5 、上好的干猴头菇呈褐色或金黄色,购买时选形体完整无缺、茸毛齐全、个大肥美的菇体;
因猴头菇带有苦味,在烹制的时候加入料酒煮制可以清除苦味;
一定要将猴头菇充分泡发后再煮软,否则会很苦、嚼不烂,大家一定不能省略这个步骤哦。
